Garden Frittata

 

hey friends don't go by this fancy name this is the easiest recipe which looks and tastes amazing. are u bored with normal omelete for breakfast? then u should try this. easy yet yummy.
all ingredients are for reference purpose u can use anything and everything in this recipe :-) some best choices are broccoli, baby corn, mushroom, capsicum...etc 

INGREDIENTS

1 tablespoons olive oil
1 medium potatoes diced
1 green onion, diced
7,8 cherry tomatoes, diced
3 eggs
chopped fresh basil(optional),
1 cheese slice
Salt to taste
chilly flakes



DIRECTIONS


Heat 1 tablespoon olive oil in a large pan over medium heat. Add the sliced potatoes to the pan, saute for about 6 to 8 minutes, until tender but firm then add the green onions, tomatoes, Saute for an additional 1 to 2 minutes.Season the vegetables with salt, and pepper/ oregano.

In a medium bowl, beat 3 eggs add pinch of salt, and pepper. Pour this mix. on veggie pan.
do not move veggies now . Reduce heat to medium-low. after 2 mins add scrumbled cheese slice. u can use grated mozzarella cheese also but i found cheese slice is easy to use. close lid and wait for 3 more minutes...
ta daaaaa...ur garden frittata is ready ....
Garnish with chilly flakes and fresh basil.
